Loaded Jackfruit Nachos

Well kids, it’s official: our family is obsessed with jackfruit. We put it in our Buffalo Dip, and now we’re putting it on our nachos.

It’s probably weird that our little family can clean up a tray of nachos and call it day, but there you have it. I honestly think everyone should start having nacho nights. It’s a really great way for the family to de-stress together. It probably helps that we’re basically all pulling from the same tray, so it’s a little bit more interactive from the get-go.

Originally, we were sticking to regular old black bean nachos. One day, I had some leftover jackfruit taco “meat,” and decided to use it up on a personal plate of nachos. It was delicious. And easy. I like easy meals, don’t you?

You’re probably thinking, wait, nachos are an appetizer. Yes, I agree with that, too. These would make an amazing party app! So for servings sizes, you’re probably looking at 4 servings for a meal, and maybe 6-8 for an appetizer.
